- In a large bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined.
- In another bowl, incorporate the Greek yogurt, honey or maple syrup, egg, vanilla extract, and lemon zest. Mix well until combined and smooth.
- Gradually pour the wet mixture into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!
- Gently fold in the blueberries into the batter, mingling them carefully without breaking them apart.
Cooking
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Drop spoonfuls of the batter onto the skillet, shaping smaller pancakes or bites.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
Serving
- Transfer the pancake bites to a plate and serve warm, with your favorite toppings.
Notes
