  • 2 ripe bananas mashed
  • ¾ cup Greek yogurt plain or vanilla
  • ½ cup sugar you can use brown sugar for a deeper flavor
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • cups all-purpose flour

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 350°F (180°C) and lining a muffin tin with paper liners or greasing it lightly.
  • Prepare the Wet Ingredients: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the Greek yogurt, sugar, eggs, and vanilla extract, mixing until well combined.
  • Mix the Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly okay!
  • Add Optional Ingredients: If you’re using chocolate chips or nuts, now's the time to fold them into the batter.
  • Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  • Bake: Place in the oven and bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
