- Preheat the Oven: Start by preheating your oven to 350°F (180°C) and lining a muffin tin with paper liners or greasing it lightly.
- Prepare the Wet Ingredients: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the Greek yogurt, sugar, eggs, and vanilla extract, mixing until well combined.
- Mix the Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly okay!
- Add Optional Ingredients: If you’re using chocolate chips or nuts, now's the time to fold them into the batter.
- Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
- Bake: Place in the oven and bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Enjoy: Once baked, allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
