  • 2 pieces ripe bananas, mashed Overripe bananas work best for natural sweetness.
  • 1/2 cup Greek yogurt Provides moisture and a healthier twist.
  • 1/4 cup honey or maple syrup Sweetener of choice.
  • 1/4 cup vegetable oil Can substitute with melted coconut oil.
  • 2 pieces eggs Large eggs preferred.
  • 1 teaspoon vanilla extract Enhances flavor.
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking soda Leavening agent.
  • 1/2 teaspoon baking powder Additional leavening.
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Adds warmth to flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth and set aside.
  3. In another bowl, combine mashed bananas, Greek yogurt, honey or maple syrup, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined.
  6. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for 50-60 minutes or until a toothpick in the center comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
  3. Slice, serve, and enjoy!

Notes

Can top with cream cheese, peanut butter, or nuts. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
