Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth and set aside.
- In another bowl, combine mashed bananas, Greek yogurt, honey or maple syrup, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture. Stir gently until just combined.
- Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for 50-60 minutes or until a toothpick in the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack.
- Slice, serve, and enjoy!
Notes
Can top with cream cheese, peanut butter, or nuts. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
