Ingredients

  • - 4 cups romaine lettuce chopped (optional, for added bulk)
  • - 2 cups cherry tomatoes halved
  • - 1 large cucumber sliced into half-moons
  • - 1 small red onion thinly sliced
  • - 1 green bell pepper thinly sliced
  • - 1/2 cup Kalamata olives pitted
  • - 3/4 cup feta cheese cubed or crumbled
  • **For the Dressing:**
  • - 1/4 cup extra virgin olive oil
  • - 2 tbsp red wine vinegar
  • - 1 clove garlic minced
  • - 1 tsp dried oregano
  • - 1/2 tsp Dijon mustard optional, for emulsifying
