  • 1 large large cucumber, diced
  • 2 medium medium tomatoes, diced
  • ½ cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
Dressing Ingredients
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste

Method
 

Preparation
  1. Start by washing the large head of lettuce under cool running water. Once cleaned, dry it thoroughly and chop it into bite-sized pieces or tear it with your hands for a rustic touch.
  2. Dice the cucumber and tomatoes, and set them aside.
Make the Dressing
  1. In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice. Add a pinch of salt and black pepper for seasoning. Taste and adjust to your liking.
Combine in a Bowl
  1. In a large salad bowl, add the chopped lettuce, diced cucumber, and tomatoes. Toss them lightly to mix.
Add Feta Cheese
  1. Gently fold in the crumbled feta cheese. Be careful not to break it down too much; you want to maintain its texture!
Dress the Salad
