Ingredients
  

For the chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons oregano

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk them together until well blended.
  3. Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure the chicken is well coated. Marinate in the refrigerator for at least 10 minutes or up to 30 minutes.
Cooking
  1. Transfer the marinated chicken onto a baking tray, and pour any leftover marinade over the top. Sprinkle feta cheese generously on each chicken breast.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  3. Remove from the oven, allow it to rest for a few minutes, then serve with your favorite sides.

Notes

For variations, try other cheeses like goat cheese if feta isn’t available. You can also swap chicken breasts for thighs—just adjust the cooking time accordingly. Leftover chicken can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months.
