Ingredients

Main Ingredients
  • 1 lb chicken tenders Use fresh or thawed tenders.
  • 2 tbsp olive oil Can substitute with other oils.
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper
Dipping Sauce
  • 1/2 cup Greek yogurt Use plain, full-fat yogurt for best flavor.
  • 1 tbsp lemon juice Freshly squeezed is preferred.
  • 1 tbsp fresh parsley, chopped Can substitute with other herbs.

Method

Preparation
  1. Rinse the chicken tenders under cold water and pat them dry with paper towels.
  2. In a large bowl, combine the olive oil, garlic powder, oregano, salt, and black pepper to form a marinade.
  3. Add the chicken tenders to the bowl and coat them evenly with the marinade. Marinate for at least 15 minutes or up to a couple of hours in the fridge.
  4. While marinating, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cooking
  1. Place the marinated tenders on the prepared baking sheet in a single layer and bake for about 20 minutes or until golden brown and cooked through.
  2. While the chicken is baking, mix Greek yogurt, lemon juice, and chopped parsley in a small bowl for the dipping sauce.
  3. Once the tenders are ready, remove them from the oven and let rest for a minute before serving.
  4. Serve hot with the yogurt sauce on the side.

Notes

For extra flavor, consider marinating longer. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for best results.
