Ingredients
  

For the Chicken Marinade
  • 2 pounds boneless, skinless chicken thighs (or chicken breasts)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and excess moisture squeezed out
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • to taste salt
For Serving
  • 4-6 pita breads (preferably whole wheat)
  • Sliced tomatoes, onions, and lettuce for garnish
  • optional olives or feta cheese for additional toppings

Method
 

Marinate the Chicken
  1. In a large bowl, mix together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  2. Add the chicken, ensuring each piece is thoroughly coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
Prepare the Tzatziki
  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and a pinch of salt.
  2. Mix well and set aside in the refrigerator to chill as the flavors meld together.
Cook the Chicken
  1. Preheat your grill or pan over medium-high heat.
  2. Remove the chicken from the marinade and grill for 6-7 minutes per side (or until cooked through and juices run clear).
  3. Allow resting for about 5 minutes before slicing into strips.
Assemble the Gyros
  1. Warm the pita bread slightly for a few seconds in a dry skillet or microwave.
  2. Place a generous portion of sliced chicken on each pita, then top with tzatziki sauce and your choice of sliced vegetables.
  3. Wrap and secure with a toothpick if needed. Enjoy immediately!

Notes

Substitutions: You can use turkey breast or firm tofu for a plant-based option! Marinate the chicken overnight for even more flavor.
