Marinate the Chicken
- In a large bowl, mix together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
- Add the chicken, ensuring each piece is thoroughly coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
Prepare the Tzatziki
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and a pinch of salt.
- Mix well and set aside in the refrigerator to chill as the flavors meld together.
Cook the Chicken
- Preheat your grill or pan over medium-high heat.
- Remove the chicken from the marinade and grill for 6-7 minutes per side (or until cooked through and juices run clear).
- Allow resting for about 5 minutes before slicing into strips.
Assemble the Gyros
- Warm the pita bread slightly for a few seconds in a dry skillet or microwave.
- Place a generous portion of sliced chicken on each pita, then top with tzatziki sauce and your choice of sliced vegetables.
