  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 1 juice of lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Tzatziki Sauce
  • 1 cup plain yogurt (preferably Greek yogurt)
  • 1/2 cucumber finely grated
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • Salt, to taste

  • 4 pita bread
  • Sliced tomatoes
  • Shredded lettuce
  • Sliced red onion

Method
 

Marinating the Chicken
  1. In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
Preparing the Tzatziki Sauce
  1. In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt. Adjust seasoning to taste. Store in the refrigerator until ready to use.
Cooking the Chicken
  1. Heat a grill pan over medium-high heat. Remove the chicken from the marinade and discard any excess. Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, allow it to rest for a few minutes before slicing.
Assembling the Gyros
  1. Warm the pita bread slightly. Place slices of grilled chicken in the center, then top with tzatziki sauce, sliced tomatoes, shredded lettuce, and sliced red onions.
