Ingredients
  

For the marinade
  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 4 cloves Garlic Minced
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt Or to taste
  • 1/2 teaspoon Black Pepper
For the chicken
  • 4 pieces Bone-in, skin-on chicken thighs Or breasts, if preferred
  • 2 tablespoons Fresh Parsley Chopped, optional for garnish

Method
 

Preparation
  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they’re well coated. Marinate for at least 30 minutes or up to two hours in the fridge.
Cooking
  1. Preheat your oven to 375°F (190°C).
  2. Place the marinated chicken in a baking dish, skin side up, and bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  3. Allow the chicken to rest for about 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For substitutions, consider turkey or firm tofu. Allow for proper marination for maximum flavor. Store leftovers in an airtight container and consume within 3-4 days, or freeze for up to 3 months.
