  1. Heat the Olive Oil: In a medium-sized skillet, pour the olive oil over medium heat. Allow it to warm up for a minute, being careful not to let it smoke.
  2. Sauté the Aromatics: Add the chopped onion to the skillet and sauté until translucent, about 5 minutes. Next, stir in the minced garlic and let it cook for an additional 1-2 minutes, ensuring you stir frequently to prevent burning.
  3. Add the Peas: Once your onion and garlic are perfectly softened and fragrant, mix in the green peas. If using frozen peas, there’s no need to thaw them first; they’ll heat up quickly!
  4. Season: Pour in the vegetable broth or water, then season with salt and pepper to your taste. Stir gently to combine everything.
  5. Simmer: Cover the skillet and let your peas braise for about 10-15 minutes. If you’re using fresh peas, cook slightly less time, just until tender.
  6. Finish with Herbs: Once done, sprinkle the chopped fresh dill or parsley over the top for a vibrant finish. Stir gently to incorporate, and taste to adjust seasoning as needed.
