Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until it becomes light and fluffy—about 2-3 minutes.
  3. Beat in the eggs one at a time, ensuring to mix well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined and smooth.
Baking
  1. Drop spoonfuls of the dough onto ungreased baking sheets, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges turn lightly golden.
  3. Let the cookies cool for a few minutes on the baking sheets before transferring them to cooling racks.
  4. Serve warm or cool, and dust with powdered sugar if desired.

Notes

To store, keep cookies in an airtight container at room temperature for up to a week, or refrigerate for about 10 days. For freezing, pack in a freezer-safe container for up to three months.
