Preparation
- Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
- Add the eggs, one at a time, and stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the old-fashioned oats, all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. It’s okay if the dough is a bit thick!
- Gently fold in the dark chocolate chunks, ensuring they are evenly distributed throughout the cookie dough.
- Use a spoon or cookie scoop to portion out the dough onto the prepared baking sheets, spacing them a few inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underbaked but will continue to firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Notes
For a perfect melding of flavors, pair with vanilla ice cream, warm milk, or coffee. Consider drizzling with salted caramel sauce for an added treat.
