Ingredients

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure butter is at room temperature for best results.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Chocolate
  • 1 cup dark chocolate chunks (or chips) Opt for high-quality chocolate for best taste.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Add the eggs, one at a time, and stir in the vanilla extract until well combined.
  4. In a separate bowl, whisk together the old-fashioned oats, all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. It’s okay if the dough is a bit thick!
  6. Gently fold in the dark chocolate chunks, ensuring they are evenly distributed throughout the cookie dough.
  7. Use a spoon or cookie scoop to portion out the dough onto the prepared baking sheets, spacing them a few inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly underbaked but will continue to firm up as they cool.
  2. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For a perfect melding of flavors, pair with vanilla ice cream, warm milk, or coffee. Consider drizzling with salted caramel sauce for an added treat.
