Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the blue food coloring until the dough reaches your desired level of blue happiness.
- Gently fold in the semi-sweet chocolate chips to ensure they’re evenly distributed.
- Using a cookie scoop or spoon, drop generous tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges become slightly golden. The centers will look a bit soft – this is perfect!
- Allow cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Store leftovers in an airtight container for up to 1 week. Cookies can also be frozen for up to 3 months.
