Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • ½ cup olive oil
  • 1 cup warm water
Flavor Additions
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • to taste sea salt for sprinkling on top Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the flour, baking powder, and salt. Whisk together until well mixed.
  3. In a separate bowl, mix the warm water and olive oil. Pour this mixture into the dry ingredients.
  4. Stir in the minced garlic and chopped rosemary. Mix until just combined; don't overmix to keep those muffins fluffy.
  5. Grease a muffin tin with cooking spray or oil. Fill each muffin cup about ¾ full with the batter.
  6. Sprinkle a little sea salt on top of the batter for an extra flavor bomb, if desired.
Baking
  1. Bake in the preheated oven for 20 minutes or until the tops are golden and a toothpick inserted comes out clean.
  2. Remove from the oven, allow to cool for a few minutes before serving warm.

Notes

Best enjoyed fresh. Can be stored in an airtight container for up to 2 days or frozen for up to 2 months. To reheat, microwave for 20 seconds or warm in the oven at 350°F.
