  • 1 cup all-purpose flour
  • 1 cup cold sparkling water Using cold sparkling water helps create a light and crispy texture.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste optional spices like paprika or cayenne Feel free to add spices to your batter for an extra kick.
Fish
  • 4 pieces fish fillets (cod, haddock, or preferred) Pat dry with paper towel before battering.
Cooking Oil
  • as needed vegetable oil For deep frying.

Preparation
  1. Gather your fish fillets and pat them dry with a paper towel.
Making the Batter
  1. In a mixing bowl, combine the flour, baking powder, salt, and black pepper.
  2. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick, like pancake batter.
Frying the Fish
  1. Pour vegetable oil into a deep pan or fryer until it’s about 2 inches deep and heat over medium-high until reaching 350°F (175°C).
  2. Dip each fish fillet into the batter, letting any excess drip off.
  3. Carefully place the battered fish into the hot oil and fry until golden brown and crispy, about 4-6 minutes, flipping halfway through.
  4. Remove from oil and drain on paper towels. Season with a little extra salt and serve immediately.

Notes

Don’t overcrowd the pan while frying to maintain oil temperature for even cooking. Store leftovers in an airtight container in the fridge for up to 2 days, reheating in the oven at 375°F (190°C) for best results.
