  • 12 pieces Medjool dates Preferred for their rich flavor and tender texture
  • 4 oz goat cheese Creamy cheese for stuffing
  • 1/2 cup walnuts, chopped Use toasted for extra crunch
  • 2 tbsp fresh mint, chopped Adds freshness
  • Honey (for drizzling, optional)
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) if you want to warm the dates.
  2. Slice each date lengthwise, being careful not to cut all the way through. Remove the pit if they haven’t already been pitted.
  3. In a bowl, combine goat cheese, chopped walnuts, and chopped mint. Season with a pinch of salt and pepper to taste and mix well.
  4. Using a small spoon or your fingers, fill each date with the goat cheese mixture.
  5. If warming the dates, place them on a baking sheet and bake for 5-7 minutes until slightly warm.
  6. Drizzle with honey if desired, arrange on a platter, and serve.

Notes

Assemble just before serving to keep them fresh. You can make the filling hours in advance and store in the fridge. Store leftovers in the refrigerator for up to 3 days.
