- Start by pitting the Medjool dates. Using a sharp knife, carefully split each date down the middle without cutting all the way through.
- In a small bowl, combine the softened goat cheese, chopped walnuts, honey, and a pinch of salt and pepper. Mix until all the ingredients are well incorporated.
- Using a small spoon or your fingers, generously fill each pitted date with the goat cheese mixture. Don’t be shy—fill them up!
