Ingredients
  

Dry Ingredients
  • 1 ½ cups all-purpose gluten-free flour
  • 1 cup coconut sugar or granulated sugar Choose according to preference.
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • 1 cup almond milk (or any non-dairy milk)
  • ¼ cup coconut oil, melted Make sure it's melted but not hot.
  • ¼ cup fresh lemon juice Freshly squeezed is preferable.
  • 2 tablespoons lemon zest Use fresh zest for maximum flavor.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine the gluten-free flour, coconut sugar, baking powder, baking soda, and salt. Mix them well until thoroughly combined.
  3. In a separate bowl, whisk together the almond milk, melted coconut oil, fresh lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing to keep the bread light and fluffy.
  5. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted comes out clean.
  2. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
  3. Slice and enjoy your Gluten-Free Vegan Lemon Bread either warm or at room temperature.

Notes

For best results, let ingredients sit at room temperature before using. Sift the flour for aeration. Do not skip the lemon zest for enhanced flavor.
