Ingredients
  

For the crust
  • 1 cup gluten-free flour
  • 1/2 cup almond flour
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup (or agave syrup)
  • 1 pinch salt
For the filling
  • 1 cup fresh lemon juice (about 4-6 lemons)
  • 1/2 cup granulated sugar (or coconut sugar)
  • 1/4 cup cornstarch
  • 1/4 cup coconut cream
  • zest of 2 lemons

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the gluten-free flour, almond flour, melted coconut oil, maple syrup, and a pinch of salt. Stir until the mixture forms a crumbly dough.
  3. Press this dough into the bottom of a greased 8×8 baking dish, ensuring an even layer.
Baking the Crust
  1. Place the crust in the preheated oven and bake for 10-12 minutes until it’s lightly golden. Keep an eye on it so it doesn’t brown too much!
Making the Filling
  1. While the crust is cooling, whisk together the fresh lemon juice, granulated sugar, cornstarch, coconut cream, and lemon zest in a bowl until smooth.
Combine and Bake Again
  1. Pour the lemon mixture over the cooled crust. Bake for an additional 20-25 minutes or until the filling is set. The edges should be firm, but the center may still jiggle slightly.
Cool and Serve
  1. Let it cool to room temperature before refrigerating for at least 2 hours. Cut into squares and enjoy your lemony delights!
