Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the gluten-free flour, almond flour, melted coconut oil, maple syrup, and a pinch of salt. Stir until the mixture forms a crumbly dough.
- Press this dough into the bottom of a greased 8×8 baking dish, ensuring an even layer.
Baking the Crust

Making the Filling

- Pour the lemon mixture over the cooled crust. Bake for an additional 20-25 minutes or until the filling is set. The edges should be firm, but the center may still jiggle slightly.
Cool and Serve
