Cake Ingredients
  • 1 cup unsweetened cocoa powder
  • 1 cup almond flour Can substitute with oat flour or gluten-free all-purpose flour blend.
  • 1 cup maple syrup Adjust sweetness to taste.
  • 1 cup almond milk
  • 1/2 cup coconut oil (melted)
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a round cake pan with coconut oil.
  2. In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt. Mix until combined.
  3. In another bowl, whisk together the maple syrup, almond milk, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. The batter should be thick and fudgy.
  5. Transfer the batter to your prepared cake pan. Smooth the top as needed.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before removing it from the pan.
Serving
  1. Once cooled, you can top it with additional chocolate mousse or berries, and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Freeze individual slices wrapped in plastic wrap for up to a month.
