Ingredients
  

For the pastry dough
  • 1 cup gluten-free flour blend Ensure it's certified gluten-free.
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, diced Keep butter cold for a flakier crust.
  • 1 large egg yolk
  • 2-4 tablespoons cold water Use as needed to form the dough.
For the filling
  • 1 cup strawberry jam Feel free to substitute with other flavors.
  • 1/2 teaspoon vanilla extract Optional for added flavor.

Method
 

Prepare the Pastry Dough
  1. In a mixing bowl, combine the gluten-free flour blend, powdered sugar, and salt.
  2. Add the cold, diced butter into the flour mixture. Using a pastry cutter or your fingers, work it until it resembles coarse crumbs.
Form the Dough
  1. Mix in the egg yolk. Gradually add cold water, one tablespoon at a time, stirring until the dough comes together. It should be smooth but not sticky.
  2. Divide the dough into two equal parts, shape them into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out the Dough
  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness. Cut it into rectangles (about 3×4 inches).
Fill the Pastry
  1. Place a teaspoon of strawberry jam in the center of half of the pastry pieces. Be careful not to overfill!
  2. Brush the edges with a little water to help seal.
Seal and Bake
  1. Top each filled rectangle with another piece of dough and press the edges together. Use a fork to crimp the edges for a decorative touch.
  2. Transfer them to a baking sheet lined with parchment paper and prick the tops with a fork.
  3. Bake for about 20-25 minutes until golden brown.
Cool and Enjoy!
  1. Allow them to cool slightly before glazing or enjoying them as is!

Notes

These pop tarts can be stored in an airtight container in the refrigerator for up to five days. For longer storage, freeze them between layers of parchment paper and transfer them to a freezer bag for up to a month. Reheat in a toaster oven or a preheated oven at 350°F (175°C) for about 10 minutes.
