Ingredients
  

Dough Ingredients
  • 2 cups gluten-free all-purpose flour
  • 1 cup almond flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 4 tablespoons melted butter
  • 1 tablespoon vanilla extract
Filling Ingredients
  • 1 cup brown sugar for filling
  • 2 tablespoons ground cinnamon
Frosting Ingredients
  • to taste Cream cheese for frosting

Method
 

Preparation
  1. In a large bowl, combine the gluten-free flour, almond flour, sugar, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Gradually add the wet ingredients to the dry mixture. Stir until a sticky dough forms.
  4. Lightly flour your work surface with some extra gluten-free flour. Knead the dough gently for about 2 minutes until smooth.
  5. Roll the dough into a rectangle, about 1/4-inch thick.
Adding Filling and Baking
  1. Mix the brown sugar and cinnamon together. Spread the mixture evenly over the rolled-out dough.
  2. Starting from one end, roll the dough tightly into a log. Slice the roll into 12 equal pieces.
  3. Place rolls in a greased baking dish and cover with a cloth. Let rise for 30-45 minutes. Preheat your oven to 350°F (175°C) during this time.
  4. Bake for 25-30 minutes until golden brown.
Frosting
  1. Mix your favorite cream cheese frosting ingredients and spread atop warm rolls.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days, fridge for up to a week, or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds.
