Ingredients
  

Dough Ingredients
  • 2 cups gluten-free all-purpose flour Ensure it contains xanthan gum.
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted Can be substituted with coconut oil.
  • 2 large eggs
  • 1/2 cup milk (or dairy-free alternative) Almond or oat milk works great.
Filling Ingredients
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine gluten-free all-purpose flour, sugar, baking powder, and salt. Whisk to eliminate lumps.
  3. Pour in melted butter, eggs, and milk. Mix until a thick dough forms.
  4. In a separate bowl, combine cinnamon and brown sugar for the filling.
  5. Lightly flour your work surface with gluten-free flour, then roll out the dough into a rectangle about 1/4 inch thick.
  6. Spread the cinnamon-sugar mixture evenly over the rolled out dough.
  7. Carefully roll the dough into a log, starting from the long side.
  8. Slice the rolled dough into equal pieces (about 1-2 inches thick) and place them in a greased baking dish.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.
  2. Let the rolls cool for a few minutes before drizzling with icing or enjoy them warm.

Notes

Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to a month. Reheat in the microwave or oven to retain texture.
