Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine gluten-free all-purpose flour, sugar, baking powder, and salt. Whisk to eliminate lumps.
- Pour in melted butter, eggs, and milk. Mix until a thick dough forms.
- In a separate bowl, combine cinnamon and brown sugar for the filling.
- Lightly flour your work surface with gluten-free flour, then roll out the dough into a rectangle about 1/4 inch thick.
- Spread the cinnamon-sugar mixture evenly over the rolled out dough.
- Carefully roll the dough into a log, starting from the long side.
- Slice the rolled dough into equal pieces (about 1-2 inches thick) and place them in a greased baking dish.
Baking
- Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.
- Let the rolls cool for a few minutes before drizzling with icing or enjoy them warm.
Notes
Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to a month. Reheat in the microwave or oven to retain texture.
