Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1 cup tapioca flour
  • 1 tablespoon baking powder Ensure freshness for best results.
  • 1 teaspoon salt
Wet Ingredients
  • 3 large eggs
  • 1/4 cup olive oil
  • 1/2 cup warm water Adjust as necessary for dough consistency.
  • 1 tablespoon honey Optional, for sweetness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the almond flour, tapioca flour, baking powder, and salt until well combined.
  3. In another bowl, whisk the eggs, olive oil, and honey until fully incorporated.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms. If the dough feels too dry, add the warm water gradually until you achieve a sticky consistency.
  5. Wet your hands slightly and grab a handful of dough, rolling it into a ball. Repeat until all the dough is shaped into rolls.
Baking
  1. Line a baking sheet with parchment paper and place the rolls on it.
  2. Bake for 20-25 minutes or until golden brown on top.
  3. Let the rolls cool for a few minutes before serving.

Notes

Store leftovers in an airtight container at room temperature for up to two days, or in the fridge for up to five days. Freeze for about a month. To reheat, bake at 350°F (175°C) for around 5-10 minutes.
