Ingredients
  

For the loaf
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened Bring to room temperature before use.
  • 1 cup granulated sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 1 whole zest of lemon
  • 0.25 cup lemon juice
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set it aside.
  3. In another mixing bowl, cream the softened butter with granulated sugar until it’s nice and fluffy.
  4. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, mix in the vanilla extract.
  5. Stir in the lemon zest and lemon juice, blending it all together beautifully.
Mixing the batter
  1. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk until everything is just combined.
  2. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  2. Once baked, let it cool.
Making the glaze
  1. For the glaze, mix powdered sugar with lemon juice until smooth, and drizzle over your cooled loaf.
  2. Allow the glaze to set before slicing—you want this loaf to shine!

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Can be frozen for up to 3 months.
