Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Set it aside.
- In another mixing bowl, cream the softened butter with granulated sugar until it’s nice and fluffy.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, mix in the vanilla extract.
- Stir in the lemon zest and lemon juice, blending it all together beautifully.
Mixing the batter
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk until everything is just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Once baked, let it cool.
Making the glaze
- For the glaze, mix powdered sugar with lemon juice until smooth, and drizzle over your cooled loaf.
- Allow the glaze to set before slicing—you want this loaf to shine!
