Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt. Set it aside.
- In a large mixing bowl, use a hand mixer or stand mixer to beat the softened butter and sugar until light and fluffy—about 2-3 minutes.
- Add in the egg, honey, and vanilla extract. Beat until well combined, scraping the sides of the bowl as needed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix!
- Using a spoon or cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheet, giving each cookie enough space to expand.
Baking
- Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Glazing
- In a small bowl, mix the powdered sugar with enough water to achieve a smooth, drizzling consistency.
- Once cooled, drizzle the glaze over the cookies using a spoon or simply dipping their tops into the glaze for a beautiful finish.
Notes
For substitutions, agave syrup can be used instead of honey, adjusting the amount slightly since it's sweeter. Keep an eye on the baking time as ovens vary; start checking for doneness at the 10-minute mark. Store cookies in an airtight container at room temperature for up to five days or freeze for up to three months.
