Main Ingredients
  • 3 ripe bananas (mashed) The riper the bananas, the sweeter the bread.
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup granulated sugar
  • 1/4 cup eggnog Adjust for richness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons eggnog Adjust for consistency.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, combine the mashed bananas, melted butter, sugar, eggnog, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, nutmeg, cinnamon, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix; a few lumps are fine!
  5. Pour the batter into the greased loaf pan, spreading it evenly.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then remove it to cool completely on a wire rack.
  8. In a small bowl, whisk together powdered sugar and eggnog to achieve your desired glaze consistency.
  9. Drizzle the glaze over the cooled bread and let it set before slicing.

Notes

Store wrapped in plastic wrap or aluminum foil for 2-3 days at room temperature, or freeze for up to 3 months. Allow to thaw and reheat slices for 10-15 seconds in the microwave.
