  • 4 pieces chicken thighs or 2 chicken breasts, cut into bite-sized pieces Use thighs for juicier results.
  • 0.5 cup soy sauce Ensure it’s halal-friendly.
  • 2 tablespoons fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tablespoon honey or brown sugar Use agave or maple syrup as alternatives.
  • 1 tablespoon sesame oil
  • 2 scallions chopped (for garnish)
  • sesame seeds (optional, for garnish)

Method
 

Preparation
  1. In a bowl, mix the soy sauce, grated ginger, minced garlic, honey (or brown sugar), and sesame oil to create the marinade.
  2. Add chicken pieces to the marinade, ensuring they are evenly coated. Let marinate for at least 15 minutes.
Cooking
  1. Heat a non-stick skillet or wok over medium-high heat. Optionally, add a splash of oil.
  2. Remove chicken from marinade (reserve it for later) and sear chicken pieces in the heated pan until golden brown, about 5-7 minutes.
  3. Pour in the reserved marinade and simmer for an additional 5-10 minutes until the chicken is fully cooked and sauce thickens slightly.
Serving
  1. Remove from heat, sprinkle garnishes of chopped scallions and sesame seeds, and serve hot.

Notes

Serve with steamed rice or quinoa. For best results, do not overcrowd the pan while cooking.
