Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened 2 sticks
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
For the Crumb Topping
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Incorporate the eggs one at a time along with the vanilla, mixing until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, ensuring it’s well combined.
  6. In a smaller bowl, mix together the brown sugar, flour, and cinnamon for the crumb topping. Pour in the melted butter and stir until crumbly.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet. Generously sprinkle the crumb topping over each mound of dough.
Baking
  1. Place the cookies in the oven and bake for 12-15 minutes, until the edges are lightly golden.
  2. Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 3 months.
