Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Incorporate the eggs one at a time along with the vanilla, mixing until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, ensuring it’s well combined.
- In a smaller bowl, mix together the brown sugar, flour, and cinnamon for the crumb topping. Pour in the melted butter and stir until crumbly.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet. Generously sprinkle the crumb topping over each mound of dough.
Baking
- Place the cookies in the oven and bake for 12-15 minutes, until the edges are lightly golden.
- Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack.
Notes
Store leftover cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them for up to 3 months.
