Ingredients
  

  • 1 large cauliflower cut into thick steaks
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • For the Garlic Tahini Topping:
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 garlic cloves minced
  • 1-2 tbsp water to thin
  • Salt to taste

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  • Prepare the Cauliflower Steaks: Carefully cut the cauliflower into thick steaks, about 1-inch thick. Make sure to keep some of the core intact for stability.
  • Season the Cauliflower: Place the cauliflower steaks on a baking sheet. Brush both sides with olive oil and season generously with smoked paprika, garlic powder, salt, and pepper.
  • Roast the Cauliflower: Roast the seasoned cauliflower in the preheated oven for 25-30 minutes, flipping them halfway through the cooking time. You want them golden brown and crispy on the outside.
  • Make the Tahini Sauce: While the cauliflower is roasting, prepare your garlic tahini topping. In a bowl, mix the tahini, lemon juice, minced garlic, and enough water to achieve your desired consistency. Season with salt to taste.
  • Serve and Enjoy: Once the cauliflower steaks are roasted to perfection, drizzle the creamy garlic tahini sauce over the top, and service them warm!
