Ingredients

Main Ingredients
  • 1 large head broccoli, cut into florets
  • 2-3 tablespoons olive oil (or melted halal-friendly margarine)
  • 3-4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional) for a zesty kick

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the broccoli florets with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the broccoli out in a single layer on a baking sheet for even cooking.
Roasting
  1. Place the baking sheet in the preheated oven and roast the broccoli for about 20-25 minutes, or until the edges are crispy and golden brown. Toss halfway through for an even roast.
Finishing Touches
  1. Once done, sprinkle the fresh parmesan over the broccoli while it's still hot. Drizzle with lemon juice if desired.
  2. Serve immediately as a side or a main attraction!

Notes

For a vegan option, substitute nutritional yeast for parmesan. Keep an eye on the broccoli in the last few minutes to avoid burning. Always toss the broccoli with oil and seasoning for the best flavor.
