  • 1 bunch asparagus Rinsed and woody ends snapped off.

  • 0.5 cup grated Parmesan cheese For added savory flavor.
  • 0.25 cup breadcrumbs Use panko for extra crunch.
  • 2 tablespoons olive oil Extra virgin preferred for taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Rinse the asparagus under cold water, snap off the woody ends, and lay them on a baking sheet.
  3. Drizzle olive oil over the asparagus, add salt and pepper to taste, and toss to coat evenly.
  4. Place the salmon fillets on the same baking sheet, skin-side down.
  5. In a small bowl, combine minced garlic, grated Parmesan cheese, breadcrumbs, and a dash of salt and pepper.
  6. Press the garlic-Parmesan mixture onto the top of the salmon fillets, ensuring an even coating.
Cooking
  1. Transfer the baking sheet to the preheated oven. Bake for about 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
  2. Remove from the oven and serve hot with lemon wedges on the side for added zest.

Notes

Substitutions include Pecorino Romano or nutritional yeast for a plant-based option. Ensure that salmon is not wet before applying the topping. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to a month. Reheat in the oven at 350°F (175°C) for about 10 minutes.
