Preparation
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- In a small skillet, heat the olive oil and sauté minced garlic for about 1-2 minutes until fragrant.
- Place the baby potatoes at the bottom of the crockpot and lay the seasoned chicken breasts over the potatoes.
- Pour the sautéed garlic evenly on top of the chicken.
- Sprinkle the grated Parmesan cheese over the chicken and pour the chicken broth around the edges.
Cooking
- Cover the crockpot and set it to low for 6-8 hours.
Serving
- Once cooked, plate the chicken and potatoes, garnish with fresh chopped parsley, and serve.
Notes
If using regular potatoes instead of baby potatoes, cut them into similar-sized pieces. For juicier meat, replace chicken breasts with thighs. Avoid adding too much liquid to prevent a soupy dish.
