  • 4 pieces chicken breasts Seasoned with salt and pepper
  • 1 lb baby potatoes Can substitute with regular potatoes cut into similar-sized pieces
  • 4 cloves garlic, minced Sautéed before adding to the crockpot
  • 1 cup grated Parmesan cheese Sprinkled over the chicken before cooking
  • 1/2 cup chicken broth Pour around the edges to avoid washing away the cheese
  • 1 tablespoon Italian seasoning Used for seasoning the chicken
  • to taste Salt and pepper For seasoning
  • 2 tablespoons olive oil Used for sautéing garlic
  • to garnish Chopped parsley Used for garnish before serving

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. In a small skillet, heat the olive oil and sauté minced garlic for about 1-2 minutes until fragrant.
  3. Place the baby potatoes at the bottom of the crockpot and lay the seasoned chicken breasts over the potatoes.
  4. Pour the sautéed garlic evenly on top of the chicken.
  5. Sprinkle the grated Parmesan cheese over the chicken and pour the chicken broth around the edges.
Cooking
  1. Cover the crockpot and set it to low for 6-8 hours.
Serving
  1. Once cooked, plate the chicken and potatoes, garnish with fresh chopped parsley, and serve.

Notes

If using regular potatoes instead of baby potatoes, cut them into similar-sized pieces. For juicier meat, replace chicken breasts with thighs. Avoid adding too much liquid to prevent a soupy dish.
