- If using fresh corn, remove the husks and silk, then cut the kernels off the cob. For frozen or canned corn, simply drain if canned and set aside.
- In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic, as it can become bitter.
- Stir in your prepared corn and season generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the corn is heated through and slightly golden.
- Reduce heat to low and sprinkle the grated Parmesan cheese over the corn. Stir until the cheese melts and coats the corn evenly.
- Finish with a sprinkle of chopped parsley for a pop of color and freshness. Serve immediately and enjoy!
Notes
For a little kick, feel free to add a pinch of red pepper flakes or stir in some diced jalapeños. Experiment with different cheeses! If you’re a fan of stronger flavors, try adding crumbled feta or Pecorino Romano. Keep an eye on the garlic while it’s sautéing; it can turn from perfect to burnt very quickly.
