  • 4 cups corn (fresh, frozen, or canned) Use the sweetest ears available if fresh.
  • 3 tablespoons butter
  • 2 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • to taste Salt
  • to taste Pepper
  • Chopped parsley for garnish

Method
 

Preparation
  1. If using fresh corn, remove the husks and silk, then cut the kernels off the cob. For frozen or canned corn, simply drain if canned and set aside.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic, as it can become bitter.
  3. Stir in your prepared corn and season generously with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the corn is heated through and slightly golden.
  4. Reduce heat to low and sprinkle the grated Parmesan cheese over the corn. Stir until the cheese melts and coats the corn evenly.
  5. Finish with a sprinkle of chopped parsley for a pop of color and freshness. Serve immediately and enjoy!

Notes

For a little kick, feel free to add a pinch of red pepper flakes or stir in some diced jalapeños. Experiment with different cheeses! If you’re a fan of stronger flavors, try adding crumbled feta or Pecorino Romano. Keep an eye on the garlic while it’s sautéing; it can turn from perfect to burnt very quickly.
