Ingredients

For the chicken
  • 6 pieces boneless skinless chicken thighs
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 1/2 cup chicken broth
For the vegetables
  • 1 lb green beans, trimmed
  • 6 cloves garlic, minced
  • 2 lemons one juiced and one sliced
For the sweet potato mash
  • 2 lbs sweet potatoes, peeled and cubed
  • 1/4 cup whole milk, warmed
  • 2 tbsp butter (for the mash)
  • 1/4 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh parsley, chopped for garnish

Method

Preparation
  1. Begin by placing the peeled and cubed sweet potatoes in a pot with water. Bring to a boil and cook until tender, about 15 minutes.
  2. While the potatoes are cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt, pepper, oregano, smoked paprika, and red pepper flakes. Once the oil is hot, add the chicken and sear for about 5-7 minutes on each side or until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add the minced garlic and green beans. Sauté for about 3-4 minutes until the beans are tender and bright green. Squeeze the juice of one lemon over the vegetables, adding a splash of chicken broth to help steam.
  4. Drain the cooked sweet potatoes and return them to the pot. Add in the warmed milk, butter, salt, black pepper, and ground cinnamon. Mash until smooth and creamy.
  5. Arrange the chicken on plates, add the garlic green beans on the side and generous servings of the sweet potato mash. Garnish with lemon slices and chopped parsley for a fresh touch.

Notes

To maintain freshness, store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for longer storage, lasting about 2-3 months. Reheat using a microwave or oven for crispiness.
