Ingredients

  • 2 pounds baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried herbs (such as rosemary and thyme) Alternative herbs can include oregano or Italian seasoning.

  • to taste Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the halved baby potatoes with the olive oil, minced garlic, dried herbs, salt, and pepper. Toss well to ensure every potato is coated.
Cooking
  1. Transfer the seasoned potatoes to a baking sheet, making sure they are not overcrowded.
  2. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, tossing halfway through to ensure even cooking.
  3. Once golden brown and tender, remove the baking sheet from the oven. Garnish with fresh parsley.
Serving
  1. Serve these potatoes hot as a side dish to your favorite entrees.

Notes

To store, place in an airtight container in the refrigerator for up to 3 days. To reheat, use a preheated oven at 350°F (175°C) for 10-15 minutes or an air fryer for a crispy finish.
