  1. Preheat your oven to 400°F (200°C). In a bowl, mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts in this mixture, ensuring they’re well-covered.
Cooking the Chicken
  1. Place the chicken breasts on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is cooked through, and the internal temperature reaches 165°F (75°C). Broil for the last 5 minutes for an extra crispy finish.
Making the Mashed Potatoes
  1. While the chicken is baking, boil a pot of salted water, then add the cubed potatoes. Cook until tender, about 15-20 minutes. Drain, then mash with milk, butter, and salt until creamy and smooth.
Preparing the Glazed Carrots
  1. In a large pan over medium heat, combine the sliced carrots with olive oil, honey, salt, and pepper. Sauté until the carrots are tender and glazed, about 8-10 minutes.
