  • 1 whole whole chicken (about 4 lbs)
  • 3 tbsp butter (melted)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • to taste Salt
  • to taste Pepper
  • as needed Lemon wedges (for serving)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a bowl, mix together the melted butter, minced garlic, rosemary, thyme, salt, and pepper.
Assembly
  1. Rub the herb butter mixture all over the chicken, getting it under the skin for maximum flavor.
  2. If desired, tie the chicken legs together with kitchen twine.
Cooking
  1. Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Let the chicken rest for 10-15 minutes after taking it out of the oven.
Serving
  1. Carve the chicken and serve with lemon wedges.

Notes

Herb variations can be used. Butter can be replaced with olive oil. Adjust roasting times for larger chickens. Always let the chicken rest after roasting.
