Cooking Steps
- Fill a large pot with water and add a pinch of salt. Bring it to a boil, then add the gnocchi. Cook according to package instructions until they float to the surface, then drain and set aside.
- In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Season with salt and pepper, cooking until the chicken is golden brown and fully cooked (about 6-8 minutes). Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
- Pour in the heavy cream and chicken broth, then sprinkle in the Italian seasoning. Let it simmer for about 4-5 minutes to thicken slightly.
- Add the cooked gnocchi and chicken back into the skillet. Stir everything gently until well combined and heated through.
- Remove from heat, garnish with fresh parsley, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm it on the stovetop over low heat, adding a splash of chicken broth or cream. You can freeze it for up to 3 months.
