  • 2 large sweet potatoes Wash thoroughly, no need to peel.
  • 4 tablespoons garlic butter Can substitute with regular butter and minced garlic.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.
  • for garnish Fresh parsley Chopped.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to get it nice and hot.
  2. Wash the sweet potatoes thoroughly and slice them into thin rounds (about 1/4 inch thick).
  3. In a small bowl, mix the garlic butter with a pinch of salt and pepper. Toss the sweet potato rounds in this mixture until they are evenly coated.
  4. Layer the sweet potato rounds in a baking dish, alternating the direction of the layers.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the edges of the sweet potatoes are golden and crispy.
Serving
  1. Garnish with freshly chopped parsley and serve warm.

Notes

Store in an airtight container in the refrigerator for up to 3 days or freeze wrapped in plastic and stored in a freezer-safe container for up to 2 months. Reheat at 375°F until heated through.
