Preparation
- Preheat your oven to 400°F (200°C) to get it nice and hot.
- Wash the sweet potatoes thoroughly and slice them into thin rounds (about 1/4 inch thick).
- In a small bowl, mix the garlic butter with a pinch of salt and pepper. Toss the sweet potato rounds in this mixture until they are evenly coated.
- Layer the sweet potato rounds in a baking dish, alternating the direction of the layers.
Baking
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the edges of the sweet potatoes are golden and crispy.
Serving
- Garnish with freshly chopped parsley and serve warm.
Notes
Store in an airtight container in the refrigerator for up to 3 days or freeze wrapped in plastic and stored in a freezer-safe container for up to 2 months. Reheat at 375°F until heated through.
