  • 1 lb beef steak (sirloin or flank) Use fresh, high-quality beef for the best flavor.
  • 2 large potatoes (Yukon Gold work best) Wash and chop into bite-sized pieces.
  • 4 tablespoons unsalted butter Use for making garlic butter.
  • 4 cloves garlic (minced) Sauté until fragrant.
  • to taste Salt and pepper Season to preference.
  • 1 teaspoon fresh rosemary (chopped) or thyme For added flavor.
  • as needed Olive oil For cooking and seasoning potatoes.

Method
 

Preparation
  1. Wash and peel the potatoes, and cut them into 1-inch cubes. Place in a bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
Cooking Potatoes
  1. Preheat your oven to 400°F (200°C). Spread the seasoned potato cubes on a baking sheet in a single layer. Roast for about 20 minutes or until golden and crispy, flipping halfway through.
Searing Steak Bites
  1. While the potatoes bake, heat a skillet over medium-high heat. Add a drizzle of olive oil and once hot, add the steak bites in a single layer. Sear for about 3-4 minutes on each side or until browned and cooked to your desired doneness. Remove from skillet and set aside.
Making Garlic Butter
  1. In the same skillet, lower the heat to medium, add the butter, and let it melt. Add the minced garlic and sauté for about 1-2 minutes, until fragrant. Avoid burning the garlic.
Combining and Finishing
  1. Return the steak bites to the skillet, toss in the garlic butter, and sprinkle with fresh herbs. Mix until well-coated and heated through.
Serving
  1. Remove the potatoes from the oven. Serve the garlic butter steak bites alongside, and enjoy!

Notes

For added flavor, consider marinating the steak for 30 minutes. Ensure potatoes are spread out for optimal crispiness. Store leftovers in an airtight container for up to 3 days, or freeze for a month.
