Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, add the halved baby potatoes.
  3. In a separate bowl, whisk the melted butter, minced garlic, Italian seasoning, salt, and pepper together until well combined.
  4. Pour the garlic butter mixture over the halved potatoes, tossing gently to coat all sides evenly.
  5. Sprinkle the grated Parmesan cheese over the buttered potatoes, ensuring they are covered generously.
  6. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  7. Place the baking sheet in the preheated oven and roast for about 25-30 minutes or until golden brown and fork-tender, tossing halfway through for even cooking.
  8. Once out of the oven, sprinkle freshly chopped parsley on top, and serve hot.

Notes

Potato selection is crucial for roasting. Avoid soggy potatoes by not overcrowding the baking sheet. They can be stored in the refrigerator for 3-5 days, or frozen for up to 3 months.
