  • 1 cup broccoli florets
  • 1 cup diced bell peppers (red and yellow)
  • 1 small zucchini, sliced
Garlic Butter Mixture
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 piece lemon, sliced
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleaning and to prevent sticking.
  3. In a small saucepan, melt the butter over low heat. Add the minced garlic and season with a pinch of salt and pepper. Stir until fragrant, about 1-2 minutes.
Arranging and Baking
  1. Place the salmon fillets gently on the baking sheet. Scatter the broccoli, bell peppers, and zucchini around the salmon.
  2. Drizzle the garlic butter over both the salmon and the veggies. Place lemon slices atop each salmon fillet for added flavor.
  3. Bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and the veggies are tender.
Serving
  1. Remove from the oven, sprinkle with fresh parsley if desired, and serve warm.
