Preparation
- Start by washing the broccoli and chopping it into florets. Drain and rinse the chickpeas to remove any excess sodium.
Cooking
- In a large skillet or wok, heat the olive oil over medium-high heat until shimmering.
- Add the minced garlic and sauté for 30 seconds or until fragrant. Be careful not to burn it!
- Toss in the broccoli florets. Stir-fry for about 5-7 minutes, or until they turn bright green and are tender but still crisp.
- Add the drained chickpeas to the skillet, followed by the soy sauce and sesame oil. Stir everything together for another 3-4 minutes, allowing the flavors to meld.
- Taste and adjust the seasoning with salt and pepper to your liking.
- Serve your delicious Garlic Broccoli Stir Fry with cooked rice or quinoa.
Notes
For additional flavor, consider adding a sprinkle of red pepper flakes or a dash of lemon juice. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet over low heat or microwave.
