Preparation
- Preheat your oven to 350°F (175°C).
- In a medium saucepan over low heat, melt the unsalted butter, then remove from heat and let it cool slightly.
- Stir in the granulated sugar until well combined.
- Whisk in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Allow the cookie dough to chill in the refrigerator for about 30 minutes.
- Using a cookie scoop, form dough balls and roll them in powdered sugar until completely coated. Place on a parchment-lined baking sheet.
- Bake in the preheated oven for 10-12 minutes until the edges are set but the centers remain soft.
- Allow to cool for a few minutes before transferring to a wire rack.
