Fruity Pebbles Sushi

Ingredients
  

Base Ingredients
  • 3 cups Rice Krispies cereal
  • 2 cups Fruity Pebbles cereal
  • 5 cups mini marshmallows
  • 3 tablespoons butter for melting
Filling Ingredients
  • 1/2 cup cream cheese, softened
  • 1/4 cup fruit spread or Nutella for filling
  • optional additional fruits (e.g. banana slices, strawberry slices) for added flavor and color

Method
 

Preparation
  1. In a large saucepan, melt the butter over low heat. Once melted, add the mini marshmallows and stir continuously until completely smooth.
  2. Remove from heat and quickly add the Rice Krispies and Fruity Pebbles. Mix everything together until the cereals are fully coated with the marshmallow mixture.
  3. Lightly grease a large piece of parchment paper or a clean countertop surface. Pour the mixture onto the parchment and press it down evenly to form a rectangle, approximately 1/2 inch thick.
  4. Allow the rice cereal mixture to cool slightly, then spread a layer of cream cheese over the top. Follow up with a layer of your preferred fruit spread or Nutella, and sprinkle banana or strawberry slices if desired.
  5. Using the parchment paper, carefully roll the mixture from one long end to the other, much like traditional sushi. Ensure it’s tightly rolled, and seal the edge by gently pressing it together.
  6. Once rolled, let it cool for about 10-15 minutes. Then slice the roll into bite-sized pieces, and you’re ready to serve your Fruity Pebbles Sushi!

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for an additional day or two. Avoid freezing as the texture might change significantly.
