  • 8 large Rice paper wrappers
  • 1 ripe mango, sliced
  • 1 cup strawberries, hulled and sliced
  • 1 kiwi, peeled and sliced
  • 1 banana, sliced
  • 1 cup mint leaves, washed and whole
  • 8 small leaves lettuce leaves (like Romaine, for crunch)
For Dipping Sauce
  • Peanut sauce or sweet chili sauce (for serving)

Method
 

Preparation
  1. Fill a large, shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds, or until it is soft and pliable. Remove it and let the excess water drip off.
  2. Place the soaked rice paper wrapper on a clean, flat surface. In the center, layer a few mint leaves, a lettuce leaf, and your choice of sliced fruits.
  3. Fold the sides of the rice paper over the filling, then roll from the bottom to the top, encasing all the ingredients tightly.
  4. Continue soaking the remaining rice paper wrappers and filling them until all ingredients are used.
  5. Arrange the finished rolls on a platter and serve with your choice of dipping sauce. Enjoy!

Notes

Feel free to mix and match the fruits based on what’s in season or what you have on hand. Prepare your fruits ahead of time and keep them chilled. Handle rice paper gently to avoid tearing.
