Pastry Ingredients
  • 1 package puff pastry (usually 17.3 oz)
  • 1 egg beaten (for egg wash)
  • 1 cup mixed fresh fruit (e.g., berries, peaches) You can experiment with various fresh fruits.
  • Powdered sugar (for dusting, optional) Dust before serving, if desired.
Filling Ingredients
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Unroll the puff pastry on a floured surface and gently roll it out to smoothen any creases. Cut the pastry into squares, about 4x4 inches.
  3. In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Beat until smooth and creamy.
Assembly
  1. Place about 1 tablespoon of the cream cheese mixture in the center of each pastry square and top with a spoonful of mixed fresh fruit.
  2. Fold the corners of each pastry square over the filling, pinching to seal.
  3. Brush the tops of the pastries with the beaten egg for a golden finish.
Baking
  1. Place the pastries on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  3. Allow them to cool slightly before dusting with powdered sugar if desired. Serve warm and enjoy!

Notes

Store pastries in an airtight container in the fridge for up to 3 days. Freeze uncooked pastries before baking for longer storage. Bake from frozen when ready, adding a few extra minutes to the cooking time.
