Preparation
- Preheat your oven to 400°F (200°C).
- Unroll the puff pastry on a floured surface and gently roll it out to smoothen any creases. Cut the pastry into squares, about 4x4 inches.
- In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Beat until smooth and creamy.
Assembly
- Place about 1 tablespoon of the cream cheese mixture in the center of each pastry square and top with a spoonful of mixed fresh fruit.
- Fold the corners of each pastry square over the filling, pinching to seal.
- Brush the tops of the pastries with the beaten egg for a golden finish.
Baking
- Place the pastries on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Allow them to cool slightly before dusting with powdered sugar if desired. Serve warm and enjoy!
Notes
Store pastries in an airtight container in the fridge for up to 3 days. Freeze uncooked pastries before baking for longer storage. Bake from frozen when ready, adding a few extra minutes to the cooking time.
