Ingredients

For the cups
  • 1 cup granola (store-bought or homemade) Choose your favorite kind.
  • 1 cup frozen yogurt (your favorite flavor)
  • 1 cup mixed berries (strawberries, blueberries, raspberries) Fresh or frozen berries can be used.
  • 1 tablespoon honey or maple syrup (optional) Use if you want added sweetness.
  • 12 cupcake liners or silicone molds Necessary for shaping the cups.

Method

Preparation
  1. Start by lining a muffin tin or silicone mold with cupcake liners. If you're using silicone molds, you can skip this step.
  2. In a bowl, combine the granola and a tablespoon of honey or maple syrup, if using. This will help the granola clump together a bit.
  3. Press the granola mixture firmly into the bottom and sides of each cupcake liner or mold to create a small ‘cup.’ Make sure it’s packed tightly, so the cups hold their shape.
  4. Spoon your frozen yogurt into each granola cup, filling them about ¾ full. Make sure to use a flavor you love!
  5. Finish off each cup by adding a mixture of fresh strawberries, blueberries, and raspberries on top of the yogurt.
  6. Place the muffin tin or silicone mold in the freezer and let them freeze for at least 2 hours, or until the yogurt is set firmly.
  7. Once they are frozen, carefully remove the cups from the liners and serve immediately or store them in an airtight container in the freezer.

Notes

You can customize the flavor of yogurt and use seasonal fruits for variety. They can be stored in the freezer for up to 2 weeks.
